We’ve added pineapple juice and substituted gin for the usual white wine in this twist on a traditional kir. Crème de cassis, a blackcurrant liqueur, still provides the drink with its distinctive flavor and, in this case, a lovely striated appearance.
¾ cup unsweetened pineapple juice
4 ounces (½ cup) gin
2 tablespoons fresh lemon juice
2 teaspoons crème de cassis (blackcurrant-flavored liqueur)
In a pitcher, stir together pineapple juice, gin, and lemon juice. Divide between 2 highball glasses. Pour 1 teaspoon crème de cassis into center of each glass; do not stir. Carefully fill glasses with ice and serve immediately.
